El Maestro Sierra Pedro Ximenez NV - 750ml

El Maestro Sierra was established in 1830 by Jose Antonio Sierra who started out as a cooper making barrels for some of the biggest sherry houses. Nowadays the bodega is run by an all women team and produces some of the most sought after wines in the region.

Made from Pedro Ximenez grapes which are left in the sun on mats to raisin (soleo) before being pressed and fortified. The wines are aged oxidatively in American oak barrels for a minimum of five years. The result is dense, sweet, silky and delicious. Pair with blue cheese, dark chocolate, vanilla ice cream.
