El Maestro Sierra Amontillado NV - 375ml

El Maestro Sierra was established in 1830 by Jose Antonio Sierra who started out as a cooper making barrels for some of the biggest sherry houses. Nowadays the bodega is run by an all women team and produces some of the most sought after wines in the region.

Amontillado is the product of two types of ageing. It begins life as a Fino, ageing biologically under a layer of flor, which protects from oxidation and develops the classic, pungent flavours of a fino sherry. After approximately 6 years the wine is fortified again up to 17% at which point the flor weakens and the wine begins to age oxidatively, a process which lasts for almost a decade. During this time the pale colour turns to golden/amber and flavours deepen with nutty, roasted tones.

A marvelous wine to pair with smoked fish, consommes and artichokes.
